Campfire Potatoes are a fantastic side dish whether you are cooking on fire or barbecue grill or oven. The best part about cooking the cheesy potatoes in the foil is that it makes cleaning a breeze.

Ingredients

  • 500 g Baby Potatoes cut into 2
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 Tsp Turmeric powder
  • 1/2 tsp Salt
  • 1 tsp pepper
  • 1 tbsp Extra Virgin Olive Oil EVOO
  • 1/2 Cup Mozzarella Cheese grated
  • 2 tsp coriander leaves chopped
  • 2 tsp Spring Onion Greens chopped
  • Chilli flakes as needed

Instructions

  • In a large mixing bowl, place the chopped potatoes.

  • Add onion powder, garlic powder, turmeric powder, salt, pepper and extra virgin olive oil. Toss the potatoes with the spices until well coated.

  • Cut 2 large pieces of foil roughly 10 -12 inches long. Divide the potatoes between both the foil packets.

  • Fold the foil packet to completely cover the potatoes. Roll the sides to seal the edges and then roll the top to seal them closed.

COOK IN BARBECUE GRILL

  • Place the prepared foil packets on grill and cook for 20 minutes until the potatoes are cooked through.

  • Unwrap the foil packet carefully. To test if the potatoes are cooked, insert a fork to see if they pass through. If they are still not cooked, place them back on the grill and cook for further 5 minutes.

  • Once the potatoes are cooked, sprinkle lots of mozzarella cheese on top of potatoes and seal the foil top back. Return the packets to the grill and cook just until the cheese melts.

  • Unwrap the packets, sprinkle cilantro leaves, green onions and red chilli flakes. Serve campfire potatoes with cheese and onions warm.

COOK IN THE OVEN

  • Preheat the oven to 180 C.

  • Place the prepared foil packets on a baking tray and cook for 20 minutes.

  • Once the potatoes are cooked, sprinkle lots of mozzarella cheese on top of potatoes and seal the foil top back. Return the packets to the grill and cook just until the cheese melts.

  • Unwrap the packets, sprinkle coriander leaves, onions, red chilli flakes and serve warm.

COBB BARBECUE GRILL REVIEW

We were recently sent the COBB CHARCOAL BARBECUE GRILL by the lovely folks at Lakeland! Our instant reaction was Omg Omg.. and we totally loved the incredibly versatile portable barbecue from Cobb. It is primarily a barbecue that can also grill, bake, fry and roast too. One of the nicest things to have when friends & family are around. Yes, it is ideal to cook for two and four people, but it also depends on what are you cooking in it.

We made Vegetable Skewers, foil packet dirty Fries and some burgers when our friends came around. Along with that, we had the chance to cook this really delicious CAMPFIRE POTATOES RECIPE IN A FOIL PACKETS WITH CHEESE AND ONIONStoo.

This charcoal barbecue takes roughly 20 – 25 minutes to achieve the cooking temperature and the 9 charcoal briquettes will burn for nearly two and a half to three hours. The handy lifting tool provided is absolutely convenient for moving the grill plate and the charcoal basket.

I spoke to a few friends and they can vouch on this Cobb oven for several years and would not camp without it. Isn’t that marvellous! I just cannot wait to carry them along to my next camping trip.

Some of the features we particularly love about this Cobb barbecue grill are

Assembly -It is extremely easily to assemble and stow away too.

Smokeless – There is absolutely no smoke that comes out while cooking! Our friends sitting next to the barbecue grill said – oh did you realise this barbecue does not smell or sends out any smoke? Probably this is one of the best features!

Stay Cool Base – We have moved the barbecue grill across our garden when our potatoes have been cooking .Thanks to the stay cool base, it is absolutely easy as the base doesn’t heat up. Place them on grass , tabletop – literally anywhere outdoor.

Easy to transport – This bbq grill weights just 3.8 kg and it comes with a carry bag. Extremely easy to transport.

Cleaning – It is mainly stainless steel and the bowl, dome and the grill are dishwasher safe. It was easy to clean and pack it away in the bag too.

Let me put my rant to a hard stop and share with you more about these delicious foil packet potatoes.
