Tips & Tricks When Making This Chicken Pot Pie Cobbler

  • Shredded Chicken – When a recipe calls for shredded chicken, I either boil the breasts or toss them in the crockpot on low for a few hours. When the chicken has an internal temperature of 165 degrees F, I remove them and let them rest for 10 to 15 minutes. Afterward, I shred the chicken using two forks or an electric mixer.
  • Vegetables – Though this casserole is typically made with frozen peas and carrots, you can easily swap them out for your favorite veggies. After all, the best part of any recipe is making it the way your taste buds prefer!
  • Don’t Mix – You will be tempted to stir the mixture together in the baking dish, but don’t! As it cooks, it all melds together perfectly. Just trust the process!
  • Let It Rest – When it comes out of the oven, allow it to rest for about 15 minutes. This rest time will allow it to thicken up a bit so that it isn’t soupy when you go to serve it.

We changed the recipe a little bit by reducing the amount of broth in the recipe to prevent it from being too liquidy (the photos in this post depict the original 2 cups of broth). We also found that reversing the order in which the broth and biscuit mix was added gave the casserole a crunchier biscuit topping as opposed to a soft one, my family much preferred this!

INGREDIENTS

  • ½ cup salted butter melted
  • 4 lbs shredded chicken breast pre-cooked or use 2 rotisserie chickens
  • 12 ounces frozen peas and carrots
  • cups chicken broth
  • 1 (10.5 oz) can cream of chicken soup
  • 2 cups whole milk
  • 1 (11.36 oz) box Red Lobtser Cheddar Biscuits mix dry
  • 1 cup shredded cheddar cheese optional
  • 1 tablespoon old bay seasoning (or seasoning of choice) optional

INSTRUCTIONS

  • Preheat the oven to 350°F.

  • Add melted butter to the bottom of a 9×13-inch baking pan and place the 9×13-inch dish on a large, rimmed baking pan.

    ½ cup salted butter

  • Add the shredded chicken to the pan, spreading around to make an even layer over the bottom.

    4 lbs shredded chicken breast

  • Spread the peas and carrots out over the chicken.

    12 ounces frozen peas and carrots

  • Whisk together the cream of chicken soup and the chicken broth in a medium bowl and pour over the ingredients in the pan, don't mix.

    1½ cups chicken broth, 1 (10.5 oz) can cream of chicken soup

  • Whisk together the milk, biscuit mix, and seasoning from the box. Add the cheddar cheese and old bay seasoning if using. Pour the mixture into the dish; again, don't mix.

    2 cups whole milk, 1 (11.36 oz) box Red Lobtser Cheddar Biscuits mix, 1 cup shredded cheddar cheese, 1 tablespoon old bay seasoning (or seasoning of choice)

  • Bake for 50 to 60 minutes.
