Chicken Taco Casserole Recipe (1)

Do you ever have a super busy week, we’ve got you covered with this amazing Chicken Taco Casserole.

We have had that kind of week. Our sweet sister Kristen was in a terrible car accident with her family.

Here in Utah we had freezing rain, which immediately turns to ice when it hits the ground.

All the freeways turned into ice skating rinks and it makes driving so scary.

Kristen and her family were headed out to visit us when a semi-truck went out of his lane.

This caused them to swerve to miss hitting him. This sent them spinning into the side of the semi-truck.

Their car was totaled and they had to rip off the door to pull Kristen out. Her arm is in a sling from injuring her elbow. But other than that, the family is fine. We are so grateful that they are all okay.

Kristen was sitting where the windshield is broken in. An accident like this quickly puts everything into perspective on the importance of families. We held our kids a little tighter tonight and took our time with bedtime stories.

  6. Multiples Mom says:

Wow! That was a scary accident. I am so glad that everyone is OK (aside from Kristen's injured elbow). It is really amazing that there was only a minor injury with the way the car looked. I like your comment, "I held my family a little tighter that night and didn't hurry through our bedtime story . . . you just never know." That is so true.

  9. Jenn says:

Oh my gosh, I am so glad her and her family are okay. The roads last Thursday were the iciest roads I have ever driven on here in Utah. Just from watching the news and seeing how many accidents and how many people were in the hospital from falling on the ice shows you how bad the roads were that day/night. On a happier note, your casserole sounds delicious.

Thankful to God that your sister is okay!

I am stationed in Okinawa with my husband and our off-base house does not have an oven nor does it have hookups for an American oven. Do you think this recipe would work if I made it in an aluminum foil pan and cooked it on medium-high heat in a covered grill for about 30 mins? Also, glad to hear your sister is okay!!!

  15. craftythriftydecoratingwifemom says:

So glad Kristen is OK. I imagine the others in the car are, too, since you didn't mention them. Guardian angel on duty for sure.

So glad to hear that Kristen & family are OK ... it could have been so much worse!
I was rear-ended last winter by a teenage driver, my car was totalled and my lower right leg and ankle were badly fractured. I'm now the owner of a number of screws and plates ... not great, BUT I'm not in a wheelchair anymore - or worse. It's been a long recovery, I still can't walk a long way or do some things I used to, but I'm determined to get back as far as can!!

  48. The Mandatory Mooch says:

    And... I'm loving this casserole!!

  56. Emily H says:

That is so scary about your sister's accident!

I made this casserole this week and would definitely make this again! SO easy and really tasty! The kiddos are super picky eaters. They hated the black beans but other than that, we got a rave review!! I like black beans so those are staying.

I'm not spotting this Recipe in the Casserole section of the website. Maybe I'm just missing it? I have it Pinned so I just go to my board to find it.

  57. Unknown says:

    Will this freeze well?

  58. Six Sisters says:

We have never frozen it, but the tortilla chips would probably go soggy.

  59. Cara Finn says:

I just saw that I don't have two cans of cream of chicken soup. I have one cream of chicken and mushroom. Anything I can use in the place of the soup?

  60. Cyd says:

I would think that one can of cream of mushroom and one can of cream of chicken would work. The taste would be altered a little.

  61. Jennifer Farrell says:

Prayers for the family as they go through healing. And thank you for the simple recipes, they sound wonderful and I can't wait to try them on my mom and fiancee. God's Blessings on ya'll. :)

  62. Cathy G says:

I made this casserole tonight, and it was AWESOME. This is an instant "Keeper" for me. I am on vacation with my 4 sisters, we take a week together every year, it's called 'sister week'. I made the recipe just as written, and laid out toppings like for them to put what they wanted on top like: Salsa, extra sour cream, green onions, cilantro. I think black olives would have been good too. Thank you for a delicious recipe.

  63. Lauren Thomas says:

This recipe looks great! I am looking for something I can make with some left over shredded chicken seasoned with taco seasoning. What do you think is the best way I can adjust this recipe to fit my needs?

  64. Nikki says:

THANK YOU! My boys loved this dish and even asked for seconds. Thumbs up from both of them.I didn't have enough tortilla chips, so I crushes in some Doritos too. Don't think I'll be able to leave them out next time.

  66. Andrea B. says:

I chanced upon your recipe and had to give it a try. Although it was very tasty I was a little disappointed at the "soupy" consistency. Even after allowing my casserole to cool it did not set they way your picture suggest but it makes an awesome chip dip.

  67. soccermom says:

For the beans there should be no juice in the beans when mixing withthe others items

  68. SMcC says:

Is this two cans of cream of chicken soup or condensed cream of mushroom soup? I making it tonight and am going for the condensed.

  69. Ashlee L says:

Just made this for dinner last week, so yummy and super easy!

  70. Darlene McDannold says:

Thank God your sister and family are ok. We had a horrible accident 35 yrs. ago. Our son was just 8. days old. We were both thrown out of our pickup. The truck landed on me and baby carrier was upside under one of the tires. On impact he slid out of the top and thrown into a snow bank. When the police finally found him he just had a tiny scratch on his forehead. I had a crushed arm and broken ribs. Three surgeries over the next year. Still have problems from that wreck and our son does not like cold weather but we were so lucky. Thankful to our Heavenly Father everyday. I will definitely try this receipe.

  71. melody says:

so thankful that your sister and her family are safe....wow. One more thing to be thankful for this season!!

  72. Karen F says:

came to your site to read the recipe and first read about sister's accident. you all have much to be grateful for. thanks for sharing with us.

  73. Crystal Doubleday says:

First let me say I am glad your family is OK. God was definitely with them and brought them through this ordeal safely. Praise be to him. Secondly I made the Chicken Taco casserole for my two nieces last night. Oh I must say how they enjoyed it. My skeptical husband said he would find something else to eat - but....he was won over by the taste. I loved the additional of black beans in this, which made it a bit more hearty. I have shared your blog and this recipe with a good number of my friends. Happy New Year to your and yours.-Florida foodie

  74. Tabitha says:

this cassorole is delicious. my husband loves it.

  75. Laura says:

I made this lastnight, and since our local grocery store's chicken just really didn't look good, I substituted canned chicken. It came out GREAT!

  76. Laura says:

If you didn't drain the rotel, that's why it was runny. I drained it before the whole mixing process, and it cane out GREAT!

  77. Lindsay Gledhill says:

What would be the best way to cook and shred the chicken forThis recipe? I know cooking it in a crock pot all day would do it but is there any other way to do it and much faster?

  78. Trinity says:

We don't do a lot of casseroles around here but this one i've made twice and we are big fans. I used half light sour cream and half greek yogurt, made my own taco seasoning and before serving put some avocado slices and green onions on top. yum! Husband is a fan too which is saying something as he is one picky eater!

  79. mary says:

tried the casserole tonight for dinner and it was great. will be using it again real soon. thanks for sharing

  80. Stacy @Stacy Makes Cents says:

This was fantastic! I used baked tortilla chips and homemade cream-of soup. Turned out great and I made an extra for a freezer meal for another day. Thank you!

  86. Pete Young (female) says:

Thank God your sister and family are O-K. Casserole looks very good

  87. Gaye Cross says:

I am not a big fan of cream of chicken soup. Can recipe be cooked with just one can of soup? It looks like there is more than enough cream with soup and sour cream.

  88. Cyd says:

We have made it with 2 cans of soup. One can might make it too dry.

  89. kim says:

Weird. I just made this dish and didn't drain the tomatoes. It wasn't soupy at all.

  90. Katharine Dutton says:

Made this last night (minus the black beans) and everyone loved it! My kids are very picky eaters but my 8 year old said it was the best meal I've ever made and after my 4 year old initially said "yuck" he ended up eating 2 full plates! Big success!

  91. Jenn says:

You didn't say what to do with the diced tomatoes

  92. Cyd says:

It's listed in the directions as Ro-tel (diced tomatoes). We'll adjust the recipe. Thanks!

  93. sally says:

What's an easy way to get the 3 cups shredded chicken?

  94. Jean says:

Can you use ground chicken in this recipe? And if so should I season it while browning?

  95. Cyd says:

You can totally add ground chicken in this recipe. Cook your chicken and then add it in as you would the cooked and shredded chicken.

  96. Melissa says:

    Looks delicious!

  97. Cindy says:

Has anyone made this RECIPE????? I'M LOOKING FOR REVIEWS TO SEE IF ANYONE LIKED IT AND WHAT THEY THOUGHT OF THE PROCESS TO MAKE IT!!!!!!!!!!!!

How many chicken breast? Do cut them into bite size pieces? No directions for that part

You need to scroll down farther in the recipe post and you'll see all of the instructions.

  100. Krista says:

Made this last night and it was delicious! What is the best way to reheat so the chips don’t get soggy?

  101. Heat's Kitchen says:

This recipe was wonderful. One of the best taco casseroles I've had (and I make it alot). It was really easy to put together & the chips really threw it over the edge!

  102. Carol says:

Taco casserole was so good. I changed it up a little. Used 2 cans Roltel 10 oz each. Put in 15 oz corn drained with black beans drained. Added more taco seasoning. Not runny.Used a rotisserie chicken. easy peasy. tasted amazing!.

  103. Cristen says:

This was so good! I didn’t drain tomatoes and I didn’t have any taco seasoning so I just make my own. Definitely making again, would be perfect for a party dish!

  105. Cindy says:

Hello! Any substitute suggestions for the cream of chicken soup? I have a picket water that doesn’t care for it and it’s in soo many great recipes. Thank you!

  106. Momma Cyd says:

There are a lot of homemade versions of cream of chicken soup online.

  107. Cindy says:

Are the tortilla chips supposed to be crunchy? I cooked it for 22 minutes because cheese was bubbly and brown.

  108. Momma Cyd says:

They will soften as the soupy mixture continues to soak into the crushed chips.

  109. Tami wassom says:

    Can I freeze this casserole

  110. Mary B says:

I was looking for a recipe for dinner that would use up a half of roasted chicken. My daughter loves tex-mex and this recipe was a perfect fit and was loved by our family. Thanks

  111. Momma Cyd says:

We love the Chicken Taco Casserole. We are so glad that your family enjoyed the recipe!

  112. Momma Cyd says:

You could freeze it, but the chips might turn soft.

  113. Rose says:

This is absolutely delicious!! I accidentally added a cand of jalepinos instead of diced green chiles but it gave it a kick that worked! Even my picky fiancé loved it. Definitely on rotation in my Prepear meal plan.

    Chicken Taco Casserole Recipe (9)

  114. Momma Cyd says:

    Chicken Taco Casserole Recipe (10)

  116. Joy says:

Can you sub plain yoigart for sour cream??

  117. Momma Cyd says:
