1 (3-4 pounds) roasted chicken

2 onions, peeled

2 celery stalks

2 medium carrots

2 garlic cloves, peeled

1 bay leaf

fresh thyme sprigs

1 tsp black peppercorns

8 cups cold water

2 tbsp apple cider vinegar

Instructions

  1. Remove the chicken meat from the bones.
  2. Place the chicken bones and the rest of ingredients in a slow cooker.
  3. Cover with a lid and cook on LOW for 24 hours.
  4. Let cool slightly.
  5. Strain using a fine metal strainer.
  6. Transfer the chicken bone broth into an airtight containers or jars and refrigerate promptly.
